How to make Rustic cake with DOP Fontina
Prepare a shortcrust pastry with flour, butter, salt, and water. Roll out two leaves not too thin, and with one of the lines, a buttered mold.
In the meantime, prepare the filling: cut the Fontina into small pieces, add the three beaten eggs, a glass of cream, and a pepper pinch.
Stuff the pastry sheet with this filling and cover with the second sheet.
Bake in a moderate oven for about an hour, cool, and serve.
