How to make the TESTINA DI CAPRETTO AL FORNO:
Clean and split the spring kids’ heads. Remove any visible cartilage. Prepare a battuto with pancetta, garlic, rosemary, breadcrumbs, salt, and pepper. Spread this mixture over the heads, pressing lightly, so the mixture adheres tightly and covering the brain portion with aluminum foil so it does not burn while cooking. Grease a baking pan and bake in the oven at 475°F for 2 hours, occasionally basting with white wine.
