Testina Di Capretto Al Forno – Oven-baked Kid Head

The testina di capretto al forno dish is considered a delicacy, especially in Calabria, Sicily and Sardinia.


Three spring kid heads
2 oz. pancetta
Three cloves garlic
Six sprigs rosemary
Six tbs. white breadcrumbs
1 cup white wine
1/2 cup olive oil

How to make the Testina Di Capretto Al Forno – Oven-baked Kid Head:

Clean and split the spring kids’ heads. Remove any visible cartilage. Prepare a battuto with pancetta, garlic, rosemary, breadcrumbs, salt, and pepper. Spread this mixture over the heads, pressing lightly, so the mixture adheres tightly and covering the brain portion with aluminum foil, so it does not burn while cooking. Grease a baking pan and bake in the oven at 475°F for 2 hours, occasionally basting with white wine.
