Ingredients:

Heart;
liver;
bellows;
bowels and retina of lamb;
salt

How to make Spiedino di Trattalia (coratella) – Trattalia (offal) skewer:

Wash well the bowels of the lamb.
Cut the heart, the bellows, and the liver asunder.
Insert them in the oven and half cook, salt, and wind all with the retina closing her/it with the bowels.
You salt and finish the cooking.
Serve warm.
