1 lb. potatoes
1/4 lb. butter
vegetable for garnish (peas, artichokes)
1/4 lb. grated Parmigiano
How to make the Potato Mold:
Boil the potatoes and mash them with a potato ricer or a sieve. Combine with butter, salt, Parmigiano, egg yolks and whipped egg whites.
Pour the potato mixture in a buttered 10-in. mold, and cook in bain-marie in a preheated oven at 400F for about 20 mins. Garnish with buttered green peas or artichokes.
