Recipe Calcioni

Ingredients

  • 1 cup flour
  • Five eggs
  • Two tbs. olive oil
  • Two tns. sugar
  • Four tbs. butter
  • 1/2 lb. grated Pecorino
  • One lemon
  • butter

How to make the Calcioni Cookies :

Mix the flour with two whole eggs, two yolks, oil, two tbs. sugar and two tbs. butter to make a dough. Let the dough rest for one hour in a cool place. Mix the cheese with the remaining egg and egg whites, the remaining sugar, and the grated lemon rind. Roll out the dough to a thickness of about l/10-in. and cut out circles 3-in. in diameter.

Put a ball of filling in the center of each disk, wet the edges, and then fold over to seal them. Mold the cookies into crescent shapes and make a small cut in the middle of each one with a pair of scissors. Preheat the oven to 350 F and bake on a buttered cookie sheet for 20 mins. Serve hot or warm.
