How to make the bistecca alla Fiorentina: Bush the meat with oil, salt, pepper, and rosemary and marinate it for one hour. Broil the meat on aromatic wood, including olive tree wood if possible. Broil 12 min. on each side (turn it only once). Remove from heat, slice, and serve. Each bistecca alla Fiorentina T-bone steak serves 2-3 people.
You may also be grill the meat without marinating it. Brush the bistecca alla Fiorentina with oil before grilling.
You may also broil the meat in a kitchen broiler.
You may sear the T-bone may on both sides in an iron pan, and the roasting finished in the oven at 550°F.
