Recipe Bianchetti al limone ed olio – Recipe Whitebait with lemon and oil

200 g of whitebait (or newborn infants)
1 lemon
10 basil leaves
3 tablespoons extra virgin olive oil (preferably west coast)
Natural mineral water

How to make Bianchetti al Limone ed olio – Whitebait with lemon and oil:

The whitebait (also known as babies) are bluefish fry anchovies that are good, either raw or barely blanched.
Finely chop the basil and emulsify with the extra virgin olive oil.
Pour two inches of mineral water into a small saucepan. The tap water could be chlorinated and then release chlorine during boiling, boil it first if you want to use it. Squeeze the lemon, and start to heat gently; meanwhile, rinse whitebait, arrange them in the basket, and steam when the water boils. Please put them in the pot to steam for about ten seconds, then transfer them to a bowl, add a pinch of salt, and drizzle with basil oil emulsion.
