Recipe Bianchetti al limone ed olio


200 g of whitebait (or newborn infants)
1 lemon
10 basil leaves
3 tablespoons extra virgin olive oil (preferably west coast)
Natural mineral water

How to make Bianchetti al limone ed olio:

The whitebait (also known as babies) are blue fish fry anchovies in particular, are good either raw or barely blanched.

Finely chop the basil and emulsify with the extra virgin olive oil.

in a small saucepan pour two inches of mineral water (tap that could be chlorinated and then release chlorine during boiling, boil it first if you want to use it), squeeze the lemon and start to heat gently, meanwhile rinse whitebait, arrange them in basket and steam when the water boils put them in the pot to steam for about ten seconds then trasferili in a bowl, add a pinch of salt and drizzle with basil oil emulsion.
