Porcini Brasati

1 lb. porcini mushrooms
Four tbs. extra-virgin olive oil
Two cloves garlic, chopped
1/3 lb. tomatoes, peeled, seeded, and chopped
One tbs. parsley, chopped

How to make the Porcini Brasati Braised Porcini:

Slice the mushrooms, or cut into quarters if they are tiny.

Brown the garlic in a saucepan with olive oil and remove. Add the tomatoes, saute for 5 min., and add the mushrooms. Cook mushrooms till tender but still crisp. Add salt and pepper to taste and add the chopped parsley. Toss and serve.
