According to some studies, it seems that garum, an ancient fish sauce in vinegar and honey, very appreciated by Roman patricians, also came from Sardinia. Furthermore, the excavations made in the area of the port of Cagliari testify how the ancient populations of the coast of Cagliari have never interrupted their relationships with the sea and with fishing. Therefore, it is possible to recognize Pisan, Genoese, and Catalan culinary influences on the island. In the coastal centers, especially Cagliari, Sant’Antioco, Carloforte, Oristano, Alghero, Castelsardo, La Maddalena, Olbia, the dishes based on fish, crustaceans and molluscs are countless with recipes which exalt the local qualities.

Gli scavi effettuati nella zona del porto di Cagliari testimoniano come le antiche popolazioni della costa cagliaritana non abbiano mai interrotto i rapporti con il mare e con la pesca. Si possono riconoscere sull’isola influenze culinarie pisane, genovesi, catalane. Nei centri costieri, soprattutto Cagliari, Sant’Antioco, Carloforte, Oristano, Alghero, Castelsardo, La Maddalena, Olbia, i piatti a base di pesce, crostacei e molluschi sono innumerevoli con ricette che esaltano le qualità locali.
